An important restaurant company is requesting an EXECUTIVE OPERATIONAL CHEF with a minimum of 5 years experience in the position in American or Texmex restaurant chains and an expert in curing and smoking meats.
POSITION OBJECTIVE
Manage, supervise, schedule, organize, integrate, direct and control the activities related to the preparation, presentation and cost of food in the kitchen department, in accordance with the policies, quality, hygiene and safety procedures, standards ServSafe or Distintivo H.
REQUIREMENTS:
- Minimum experience of 6 years in the position
- Time availability
- Bachelor of Gastronomy, Food Engineering or Street Knowledge.
- Wood and meats knowledge.
ACTIVITIES:
- Implementation of new recipes
- Recipe costing
- Approval in all branches
- Food preparation
- Curing and smoking meats.
- Food processing
- Management of indicators
